By far the best, in my humble opinion, free stellplatz to use when visiting Nurnberg is Am Wohrder See. Campercontact 3314. It suffers road and rail noise, and you need to be early in the day for one of the limited spaces, but it doesn’t suffer from contamination by the freeloading low life fortune tellers that frequent the other two free sites. The app photos aren’t the most inviting - but it’s close to a lovely riverside park which is a ten minute bike ride to the centre. Not many Brits appear to use it. We are currently neighbours of 1 German, 1 Spanish and 11 Italian vans. It’s also on a bus route to town. Lidl and Netto about 800m away.
No facilities.

Correction from OP. It’s not a river, it’s a lake surrounded by the park, very recreational in the evenings by residents enjoying activities. Nice level cycling/walking circuit all the way around lake, about 5 miles.

Last time we were in Nürnberg the Wöhrdersee Stellplatz was full, as was Volkspark Marienberg and Dutzendteich.
We have stayed at Gasthof Brez'nwirt before, which we found good. It is only 250 m from the underground, and the noise of the nearby airport wasn't a problem.

The best place that we found is the parking area at the Tiergarten (zoo) at coords 49.4539 , 11.1389.
It isn't an official Stellplatz, but it is a large parking area between trees, where overnight stays are tolerated.
It costs €5 for parking during the day but at night it is free and very quiet. There is a No. 5 tram line into the town from just outside.
