Never leave a campsite with your clothes line tied to a lamp post.
SWMB needs to be able to dry her hair when wilding and our travel hair dryer is rated at 1600W according to the blurb. When I look at inverters on Amazon there seems to be a lot of choice around the £25.00 mark but these are only rated at 300W. How do you guys get around this? Do we need a lower power hairdryer or an much more powerful (and expensive) inverter?

Tell her it is not practical..
you would need to invest in a large battery bank and a wallet bustin' 2,000watt inverter ..

at 12volts, a 1600watt dryer will pull 133 amps.. normal leisure batteries are not designed for such heavy loads .. so you would need to invest in traction batteries

Gwen has a hair drier rated at 800w and it runs fine on our 1300w inverter. We have 3 batteries and 400w of solar to recharge them.

We have a 700 watt hair dryer which are quite reasonable, we use it with a 1500 watt invertor
