I watch a lot of Youtube sailing videos.
In those videos and others you can see a lot of views looking back towards the subject where it appears a drone is flying , guided via a small handheld baton.
Here is a good example (move to about 22 minutes in)

However , via this video, I learn it is an Insta 360 ONE X2 camera on the end of a 9' long boom or selfie stick.
The software removes the boom which means you only see the handle that someone is holding.
It also allows you to manipulate and sequence the images and viewpoints within the 360 degree view.
I'm impressed
