How long should it take for the gas to shut off (thermo couple)

On an old Electrolux 3 way fridge(late 90s) how long should it take for the thermo couple to cool and shut the gas off if flame goes out after running for a while?
 
I think on our modern 3 way, it just triggers continuous sparking until it relights.

This is one of the issues at the mo. Fridge stays lit which suggests thermo couple is working, but my igniter doesn't stop once fridge lit. I can manually turn it off, but everytime I've blown the flame out, the gas doesn't seem to shut off, which then suggests the thermo couple isn't working. However I haven't left it as long as 60 secs (suggested could be the case above) as I expected it to be far quicker than that.

In the scenario you describe, it is reasonable to expect this delay as the thermocouple will be hot and will have to cool down before the signal will drop sufficiently to close the cutoff solenoid. If the igniter had failed to light the gas would shut off straight away.

Yes this is the case. Works instantly when trying to light.
