First time I have used the D/S and wondering how the heat diffuser is used? Also is it best to put something in bottom of pan to stop it "burning things?"

Not long enough!
The heat difuser goes on the stove under the pan. It spreads the heat put under the bottom of the pan to avoid stuff burning.

Oooooo you are soooooooooooooo naughty ... but right! :D2

@Chris51 as Sue says above, just don't have the burner on too high, medium at most, so that the heat 'spreads' under the pan. If you are going to use the diffuser it's best to put the pan on a little bit earlier than you need to as it will take a little bit longer for the diffuser to get hot before it starts to spread the heat around the base of the pan, similarly when you finish cooking make sure you take the pan off the diffuser if you leave the food in it as it will retain the heat and keep cooking the pan contents.

No, he's not saying that at all, they are a great bit of kit, it's just that Nicknic is on a 'downer' at the moment on most things! :D
