I have to admit that you have our genuine admiration undertaking a trip like that - with just a tinge of jealousy perhaps lol. It will be amazing so enjoy every minute of it.
We've made it to Corfu. Loving it although to be honest we're still figuring the lifestyle out!
Our daughter is meeting us here so we'll be on Corfu for the next 12 days or so. Most if not all the campsites are closing down so we've rented a house while she's with us.
A Swiss guy and his wife parked up next to us on the campsite in another sprinter 4x4. He was a goldmine of info on the Greek mainland and Albania, dead lucky.
So after Corfu. Mainland Greece, turn right and follow the sun
So we've travelled through the culinary centres of the universe, had to put up with artisan bread, farmers market cheeses, local honey, cured meats of every description, fruit, veg some of which had no resemblance to anything at home.
But...... since being on Corfu we've had a full English, kebab (gyros), chips and larger. Omg it's good.

Oh and anyone thinking of spending their hard earned on the "Cool Camping" book save your money. What a pile of pretentious st#te.
The only criteria for getting in there seems to be that the campsite has yurts or does yoga. Ours will be on eBay as soon as we get home.
