Trying to keep my Rapido Dometic fridge cool so took the vents off. Thinking will be installing fans when get back home.
However whilst looking at it with the outside vent off I noticed a tub with water in it, yet I cannot any reference to it in my manual.

Anyone know what it is and should the level be 1/3 ?

many many years! since I was a kid
its a condensation collector and uses the heat of the pipe to evaporate the contents. the condensate comes from inside the fridge. the level depends on a few things including humidity and the heat of the evaporator. nothing to worry about

Thought it might be but I am no expert
Struggling to keep it cool in this 36 to 39 degree heat atm. Wanted ti check this was not the cause. Think ots just the heat..
Wish I had installed fans before I set off.
I thought about it but just came out of service and was told all working correctly.
First time away in this heat. Lesson learnt.
Currently have both vents off and rigged up my endless breeze fan to suck air out of the top. Not idea but keeping it lower than without it.

Out of interest is your freezer still frozen, we find that even when our fridge can't keep things cool the freezer stays frozen, doesn't make sense to me

It was yesterday but not today. Only partially today but it was very hot last night and not cooled down today yet. I have noticed in past freezer works a lot better. Occassionaly I thought fridge seemed to be warmer than normal but freezer was solid.
I have only got cheapo hanging sensors. Planning to purchase better more accurate ones.

many many years! since I was a kid
especially in high ambient heat, turn the fridge down to middle setting or it overheats the absorbtion side reducing efficiency. in other words, on the top setting the fridge is warmer

We had the exact same problem 2/3 years ago and did exactly what you did.
I called my guy who tested the fridge and said that it's working correctly but suggested fitting a fridge fan, so he did and it worked brilliantly since.
