Fridge over cooling, freezing everything

I have a problem with my Electrolux RM4401 fridge in my 2001 B584, normally people have a problem with fridge not get cold enough,well mines the opposite, it’s freezing everything..
Last year it wasn’t working very well so I removed and cleaned the jet and in my wisdom thought I would use an airline (only gently) and blow back up the pipe , so I removed pipe from manifold under sink and blow up pipe.
I think in doing this I must of damaged something in the gas valve because no matter where I put dial the fridge is way to cold, fins covered in ice😒

I’ve tried a different jet and it’s still the same, I did notice the thermo couple tip is burnt but I think this just keeps the gas valve open.

Any suggestions

My first thought is the thermostat, keeping the fridge on and not cutting out once temp reached.

Has the thermostat failed Nick and now not controlling the burner?
We had the opposite with one of the ovens at home where it was flat out heat whatever the temperature was set to, I fitted a new thermostat and all good now.
That’s my suspicion but where is the thermostat, I can only see the gas valve with control knob and the thermo couple.

Is the thermostat plugged in to the fins plate, on the interior back wall of the fridge.
I seem to remember having to remove it, when I renewed the heat sink gel.

I'm with Jock, it's on the fins at rear of inside of fridge. Google it and you will see what it looks like.

In which mode does it over-cool? Is it gas, 240v or 12v operation?

I would have thought it would use the same thermostatic switch for both gas and 240v. Perhaps they are independent devices. Have you looked for spares for this particular fridge, do they list two separate thermostats?

So pleased I posted twice, but not internationally, internet speed is good but seems slow😒
