Good solid chewy nut cake.

LOW FAT CAKE
1 lb Cake Fruit, 10oz mixed nuts,
2 tsp mixed spices, 3 eggs,
4oz Self Raising Flour, 4oz Brown Sugar
Gas 2 1 ½ hours. Big loaf tin.

Soft moist and yummy.

DIABETIC FRUIT TEA BREAD.
12 tbsp cold strong tea 1lb mixed dry fruit (raisins,apricots, sultanas)
5oz castor sugar 1 egg beaten
1oz unsalted butter, melted 8oz plain flour, 1 tsp bicarb
Put tea, fruit and sugar in large bowl mix together, cover and soak overnight.
Next day grease and line 2lb loaf tin, Preheat oven to 180C/350F/Gas 4.

Add all remaining ingredients to the bowl of fruit and stir in well. Spoon mixture into the loaf tin and bake for 1 1/2 hrs.

Cool for 10mins in tin then transfer to wire rack.

Another fruit cake with no added fat or sugar :-

A naturally sweet and delicious cake with no added fat or sugar.
The texture is fairly dense.

450g / 1 lb. dried mixed fruit
30 ml / 2 tbs. dry sherry or brandy (optional)
225g / ½ lb. prunes chopped small (or dates)
275 ml / ½ pt water
50g / 2 oz sunflower seeds (or nuts)
10 ml / 2 tsp. mixed spice‚ (I usually double this)
225g / ½ lb. plain wholemeal flour
15 ml / 1 tbs. baking powder
Grated lemon and orange rind (optional)

Soak dried fruit in sherry or brandy and the water, add chopped prunes‚ leave to soak or microwave for 1 - 2 mins - add all the remaining ingredients and mix thoroughly

Spoon into 8 in. Round cake tin, level surface and bake in centre of preheated oven.

160 oC‚(325 oF)‚ Gas 3 for 1¼- 1½ hrs‚ when cooked, turn out of tin and leave to cool on rack.

When cold, wrap well in foil and store in airtight container - best eaten in 3 or 4 days as it has no keeping quality but freezes well

I'm making a fruit cake to take to Stafford - these days I usually make Phil Vickery's fruit cake:

but use Dove's Farm flour and a mixed fruit pack instead of all the different fruits. For every day it doesn't get decorated!

¼ Kilo Cake


I use the kilo cake recipe (enough to make a 3 tier wedding cake using full quantities) for 1 cake I use a quarter mix



250g currents}

250g raisins } or 750g mixed fruit

250g sultanas}

100g glace cherries

1 orange} Zest & juice

1 lemon}
250g butter

250g bread flour (Doves Farm Bread Flour & tsp xanthium gum, for wheat & gluten free cake)

2 tsp mixed spice

250g dark brown sugar

250g eggs (weighed after shelling)

70cl dark rum or brandy

Tbls glycerine

Tbls black treacle


Method

Soak fruit and zest in rum, orange & lemon juice and glycerine for at least 24hrs (the longer the better)

Cream butter, sugar and treacle till light and fluffy.

Gradually add eggs, flour and mixed spice alternately

Mix in the soaked fruit


This will fill an 8” square tin (line with paper)

Cover with baking parchment


Bake 1- 2hrs at 160c fan oven

Gas mark 4-5

Test cake with a skewer if it comes out clean the cake is cooked

My wife (who can't sleep and is using my lappy without my knowledge) asks why Dinah's Fruit Loaf is misnamed 'diabetic'. She says only animals (human or otherwise) can be diabetic. Inanimate objects can't become diabetic since none of them even have a pancreas let alone Beta cells in their Islets of Langerhans.

As for being suitable for diabetics let's just say she thinks it would be uttterly brilliant for her - as long as Hilldweller eats it all.
