Had to cut our France holiday short due to the quarantine restrictions that came in. Lost eight days of holiday and had to pay in full for lost days. Could we claim on our insurance?

I assume you were staying in a hotel. We use sites quite often and have only ever paid on leaving for the number of nights we've stayed.
Just have to ask the insurers, but if you paid in advance unessararily then you might be out of luck.
