They have already done that, its called Quorn.
Stretching the definition a bit. Edible yes, palatable, not so much. My veggie son hates the stuff - prefers non artificial veggie food.

They have already done that, its called Quorn.

I was at Billingham, in ICI Engineering Division, helped to build the plant at the back of ICI, pity it didn't work properly due to its size.
They 'found' the fungus in a field and it was intended for cattle feed. But found it made good food for veggies.
