I have just bought a generator to use if we are camping in the cold without EHU. Is there any chance that a generator could damage the internal electrical systems???

Hi.. your internal electrical system will likely be primarily your 12v system.. the only link between mains and that would be the mains charger..
You ma have a few 230v sockets and a 230v fridge supply ..
There should not be a problem using a generator...

In a word yes, if it’s a cheap one.

Especially if they run low on fuel and surge it shoves voltage up and down like a see saw.

Pure sine wave inverters should be fine, a cheap builders generator, I would be very wary and make sure it’s warm and full of fuel and doesn’t switch big loads on and off.
