So when you have to keep 2 chevrons apart on the motorway do you count the space as 1st to 2nd chevron, or 1st to the 3rd chevron in front? Never really thought about it in the car but now I am not sure!

1st to 3rd
i.e if vehicle is on a chevron then you must be able to see the next chevron without being in front of the 3rd one. Here it is actually a legal requirement where signed & normally always in tunnels. The requirement here is 2 chevrons = 100m for cars
& for lorries 3 chevrons = 150m

I just count how many I can see that aren't covered by the vehicle in front!

Or not, I try and keep a safe distance within my perceived braking area regardless of chevrons. If you aren't sure how far apart they are how can they be of any assistance?

You need to see 2. they tie up with the 2 second rule. 2 seconds approximately between each chevron.
