In APT just outside Avignon it was a bit nippy Last night as lost all my fresh water as the switch dropped out, how can I stop This, when I had my Hobby I used a peg on the top of the switch, need advice on the Burstner one..

I’ve got the same model as you
Nothing on the fresh water at all but do have a drop out valve by the side of the boiler
It activates at just a tad above freezing and dumps around 10 litres of water from the boiler heating jacket
The fix is to drop a small jubilee clip over the plunger on the top of the valve followed by a piece of wire which goes Horizontally through the hole on the top of the plunger and sits on the top rim of the jubilee clip, this stops the plunger from dropping down

If it's opening while the van is in use you might want to fit the heater unit Truma supply it mounts on the valve and connects to the boiler and heats the valve all the time the boiler is on costs about £35.
Or consider repositioning the valve nearer the boiler.

Thread about it here.
