We've got the same van. It's a 2004 and we love it.
The switch you talk about is for the fans behind the fridge. Never had ours working but after a bit of research, when switched on, they are supposed to spin when the outside temperature gets above a certain level. Not been warm enough to try them yet but hopefully next year.
Not used the bed but I reckon it's trial and error.
Have you got the aluminium framed polyvision windows and if so has the modification been done to stop them leaking ?

Our E745 is 2000 Reg, and the switch is in a different place.
Seems it does the same job, prevents the fridge overheating as Tom A says.
We just leave it on when the fridge is on.
