A few months ago I asked the same Q for our MH and happily have my gas connection sorted.
I'm now asking the same Q for another AT owner. The fitting is different to mine. It looks like the bottom part doesn't come off...or does it? How do you connect a gas hose. Is there another fitting he needs?

Yes, you need the other part.
It fits to the hose and pushes into the bottom part of what you have.

If the tap is post 2004 then this is what you need.

They ARE NOT interchangeable.

Simply push up until latched and turn on gas.
To release push up on the bottom of the fixed part and the hose connector will release and drop out.

As John said there is more than one type and they are not interchangeable even if it seems like they fit. You need to be very careful trying to do it from a photo as the different types look quite similar.

Sods law It's a 2004 so still not sure between the two.

It looks like the one in the first photo but without the bottom ribbed part. It's like it's got a half part fitted that needs to come off for a whole new one to be fitted.
EDIT
the brass bit turns but the very bottom part doesn't so maybe it's not meant to come off.

The moving part is the release mechanism when pushed upwards....the very bottom part isnt meant to move and holds the part that is missing which connects to the bbq hose.
