A Salad for the Hot Weather

Mrs DBK has made this salad for lunch twice this week and it was perfect for the high temperatures most of us are experiencing now.

Ingredients:

Watermelon peeled and cut into cubes. If there are a lot seeds in the middle scoop them out with a spoon.
Cucumber cut into small slices. Peel and deseed if you want but this is not essential.
An avocado cut into cubes.
Feta cheese cut into cubes.
One small banana shallot very finally diced. The original recipe used a red onion but we refer a shallot.
Finely chopped fresh mint leaves. You can also use fresh oregano. Dried herbs could be used at a pinch.

The dressing is made from one third lemon juice and two thirds olive oil plus salt and pepper.

Ideally make up an hour or so before needed and put it in the fridge but if you don't have time or space in the fridge eat as soon as made!
 
I remember at work a patient peeing red ..... lots of panic until I asked had he been eating beetroot in the last couple of days.

I don't mind raw shredded beetroot in very small amounts but anything more and :sick:

I eat loads.....pickled in jars or fresh on plastic trays.
Once even tried cooking some.....took far too long.
Agreed, don't waste your time or money cooking beetroot it is cheap and easy to get ready cooked in all supermarkets now.

My Dad used to grow beetroot when I was a kid ( amongst other things, we had an enormous garde and were self sufficient in veg for much of the year) . I can still remember the smell of beetroot being boiled yuk! Although I quite enjoy prepacked beetroot from the supermarket

Similar to Nigella Lawson's watermelon salad recipe which is lush too (y)

Like the salad but not too keen on feta.
Have you tried beetroot and chocolate cake, really moist and yummy and doesn't taste of beetroot.

Yes made one during my few short vegan days a few years ago, really lovely. I was coping alright until I saw Nigella Lawson tip a tin of tomatoes into a pan, she warmed them up then cracked an egg in and cooked that, then dipped a big chunk of bread into it. That was it I had to have it, no longer a vegan after that day:giggle:(y) It's still my favourite brekkie now.

I love a salad made with grated carrot, chopped beetroot and sultanas dressed with olive oil, balsamic vinegar and caraway seeds.

Leave it to stand while the sultanas soak up the dressing. Lush!

Are you trying to kill me, cucumber is poison, don't like water melon and avocado's are disgusting. What's more there is no meat or fish. :LOL:
I'm sick to death of salads, however exotic they may be. No way are they Mangrub.
 
Recovering from COVID all I can eat is cheese on toast for some strange reason...... Mind I've had nearly a week not eating.

Pickled beetroot, sliced, on top of a thick layer of crunchy peanut butter, on a thick slice of home made Sourdough.
Shit, I've just realised I could be a vegan. 🤣

No lettuce salad..
Tomato, cucumber,gherkins, red peppers,olives,cornichons,silver skin onion,feta ,salt and pepper and a tablespoon of French dressing..

I have gone off tea since having covid, have to have one first thing, then can't stomach it for the rest of the day, back on black coffee, no gastritis as yet 🤞
