Seeing as I can't be at Malvern to share my home made microwave fudge I thought I would put the recipe on the forum, so here goes:

This recipe is for a 700 watt microwave so some adjustment might be necessary.

Ingredients:
100 grammes Dark Chocolate
100 grammes Unsalted Butter, cubed
450 grammes Icing Sugar - sifted
3 tablespoons Milk

Method:
Place ingredients into a heatproof bowl and cook uncovered for 3 minutes until melted, stirring twice during this time.
Beat till smooth (at this point you can add nuts, raisins, sultanas etc)
Pour into a 7inch tin lined with baking parchment and allow to cool mark squares, then chill in the fridge till set, cut into squares

Coffee Fudge this time.

Once again based on a 700 watt microwave:
with this recipe stirring well is the secret.

Ingredients:
450 grammes Icing Sugar - sifted
196 grammes Sweetened Condensed Milk
2 tablespoons Golden Syrup
50 grammes Unsalted Butter - cubed
1 tablespoon water
1.5 tablespoons coffee essence (Camp Coffee)

Method:
Mix ingredients together in a large heatproof bowl
Cook uncovered on defrost (30%) for 10 minutes stirring appox every 1.5 minutes
Cook on full power 7 minutes (or until it reaches 240F, 116C)
Beat until mixture begins to thicken and grain. Pour into a shallow, square 7inch tin and allow to cool. Mark into squares. Cut into pieces when cold.

I knew there was a good reason for me ignoring the large bar of Galaxy in my corner shop today...........these sound great!:roflmto:

Will give these a go and have "Camp" coffee in the fridge at the moment for my iced coffees and whipped cream:roflmto:
