We've stopped at Segorbe a number of times and always very quiet.

Never stopped overnight, just for a daytime cuppa.
BUT Segorbe gets another vote..

You can do Sobradiel to Benidorm in the day. Use the toll rd AP7 from Valencia to Beni as it saves time (an hour) and not that expensive.
The A23 down from Zaragoza to Valencia is like a 2 lane motorway so an easy drive..

For quite a while now Segorbe aire has had signs up saying that you can't park overnight. I don't know if it is enforced. Check it out on the Spanish aires websites areasac.es or lapaca.org

Nothing on either site says no overnighting. Have you seen the sign yourself?
