From time to time I will be putting up some of my favourite recipes. The main object of this exercise is hopping to convert JJ from those disgusting tinned pies, but am sure others may find them useful. This is how I like my steak.

Serves 4
Ingredients
4 - 8oz Good rump steaks.
1 tbsp. dried basil
1 tbsp. salt
1 tbsp. pepper
1 tbsp. garlic powder
Instructions
1.Remove steaks from the refrigerator and let sit for 15-20 minutes to let the chill wear off
2.In a small bowl combine dried basil, salt, pepper and garlic powder
3.Rub spice combo on both sides of each steak and continue to let steaks rest until grill is ready
4.Heat gas grill, charcoal grill or indoor grill to a medium heat
5.Place steaks on grill and let cook for 6-7 minutes, without moving it, and then flip and let continue cooking for another 5-6 minutes for medium rare to medium or longer until desired doneness is reached
6.Remove from grill and let rest for 5 minutes
7.Serve & ENJOY!

Starbucks lemon loaf.

If you like Starbucks lemon loaf, and I dont know anyone that doesnt, but object to paying the inflated price for it, this is as close as it gets.

Ingredients:
1 1/2 cup(s) FLOUR
1/2 tsp BAKING SODA
1/2 tsp BAKING POWDER
1/2 tsp SALT
3 EGGS
1 cup(s) SUGAR
2 TBS BUTTER; Softened.
1 tsp VANILLA
1 tsp LEMON EXTRACT
1/3 cup(s) LEMON JUICE
1/2 cup(s) OIL
Lemon Icing Ingredients:
1 cup POWDERED SUGAR; Plus 1 Tablespoon.
2 TBS WHOLE MILK;
1/2 tsp LEMON EXTRACT
Instructions:
Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.
Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.

Oh Dave how nice of you ! But I can tell you straight away this one won't work ..... There's an "enemy" in your recipe ..... Some French ingredient which JJ won't want in HIS food!

I could try to send you a list of the things he doesn't like .... but I think it would be quicker to list the ones he likes:roflmto::roflmto:

I dont see why not, the powder sticks better to the steak with the other ingredients, and helps dry the outside of the steak before BBQing.

Have you got a recipe for Meat Loaf please ???? I usually use Delia !!:Blush::Blush::Blush:

Try this one, they tell me its also healthy as long as you use lean mince and use spray oil instead of lard to grease the tin.

Stuffing Meatloaf

1 package Stuffing mix, dry
1 c. warm water
1 1/2 lbs. lean ground beef
2 eggs, slightly beaten
1 package onion soup mix

Preheat oven 350°. Coat inside of bread pan with cooking spray.

Place warm water, onion soup mix and dry stuffing mix in a bowl. Mix well. Let sit for 5 minutes to allow bread time to absorb water.

Add eggs and ground beef. Mix well. Best to get it blended by using your hands and incorporating it all together.

Place evenly into bread pan. You can also put into muffin tins to make individual loafs.

Bake 1 hour or until no longer pink inside.

Remove and allow to rest 5 minutes before cutting into.

If you crush a ripe kiwi fruit and spread over any Steak, leave for a hour, then wash off, it tenderises the meat

Steak as "rare" - - - 3mins each side
- - - -- - "medium"- - - 6mins each side
- - - - "well done"- - - 9mins each side

Mushrooms in white wine, easiest thing ever for M/H cooks Serves 4-6Only takes 10-15mins (depends how much wine you add:Smile:)


500gms Button Mushies sliced
500gms Tagiatelle
2Tbsp Olive Oil
1 clove garlic, (Lazy Garlic is better)
glass of white wine
Chopped Parsley

Cook Tagiatelle until "al dente", Drain
Meanwhile heat oil in frying pan over med heat add mushrooms, cook for 2-3mins, stir in garlic and wine, simmer until wine has almost evaporated, Add Pasta, Parsley, season to taste, Toss to combine

Serve with green salad, crusty bread, and a nice Australian Chardonnay:thumb:

Now the BBQ season is upon us, this should go down well. Personally I like thick pork chops done like this, but I suppose belly pork or any chicken will be good.

Baked Honey Wings
Serves 8
A favourite baked wing recipe with the perfect hint of sweetness
Prep Time - 10 min
Cook Time - 1 hr
Total Time - 1 hr
Ingredients
2 1/2 lbs chicken wings
1 tsp olive oil
1/2 cup soy sauce
2 tbsp. ketchup
3/4 cup honey
3 garlic cloves
1 tbsp. chili powder
1 tbsp. pepper
Instructions
1.Preheat oven to 350
2.Spray a 9x13 baking dish with nonstick spray
3.Place chicken wings in a single layer in the baking dish
4.In a bowl combine remaining ingredients, whisking until just combined
5.Pour soy sauce mixture over chicken wings
6.Bake for 1 hour, or until sauce begins to caramelize
You could also use chicken legs, breasts, pork ribs or pork chops

Chorizo and Chickpea Stew

This recipe is a favourite with us both at home and in the 'van. There are many variations, some with smoked parika, cabbage or spinach but the basics are chorizo, tomato and chickpeas. We also add tomato puree and about a dessert spoon each of dark Soy and Worcester sauce for extra flavour. The chilli can be omitted and usually is when my wife is cooking it!

Ingredients:

2 tablespoons olive oil
1 medium onion (chopped)
½ red pepper (chopped) (Optional)
2 cloves garlic (finely chopped)
125 grams uncooked chorizo (sliced) (Minimum amount, the more the heartier)
1 can chickpeas (washed and drained)
1 can chopped tomatoes
1 bay leaf
2 teaspoons chilli (chopped - to taste, or use dried chilli flakes)
1 handful chopped fresh parsley or coriander, or dried for convenience.

Method

1. Heat the olive oil in a pan. Add the onions, red pepper (if using) and garlic and fry for 2 minutes to soften. Add the chorizo and fry for 2 minutes to release the flavour.
2. Add the chickpeas and fry for a further minute or so. Add the chopped tomatoes, bay leaf and harrissa paste or chilli; cover with a lid and allow to simmer for 15 to 20 minutes or until it seems cooked.
3. Add salt and pepper to taste.
4. Serve in bowls with parsley sprinkled generously on top and with lots of crusty bread.

As we spend so much time in the sun, we are always BBQing. I do cheat as its allowed ::bigsmile:. The slow cooker is the campers best friend as it can be used on any campsite hookup regardless of how minuscule the supply is. It can also be used on a small inverter as you drive along. If travelling to a meet or show just plug the slow cooker into the inverter and when you arrive just throw the ribs onto the BBQ for a couple of minutes to brown them. If you like your sauce sticky then a good dash of cola will give the results. Wear a bib though.

Serves 8
A fall-off-the-bone slow cooker rib recipe that melts in the mouth.
Prep Time - 15 min
Total Time - 8 hr
Ingredients
4 pounds spare ribs - trim off excess fat
2 tbsp season salt
2 tsp Worcestershire sauce
1 tsp vinegar
18 oz low sugar BBQ sauce
2 tbsp brown sugar
Instructions
Cut ribs to fit in slow cooker
Season ribs with season salt
In a medium bowl mix remaining ingredients until combined
Put first layer of ribs in slow cooker
Pour 1/2 of BBQ mixture over ribs, repeat with remaining ribs and sauce
Coat ribs as much as possible
Cook on low for 6-7 hours, until meat is tender
Remove from slow cooker and place on hot grill for 2-3 minutes per side until a little charred.

How small inverter would be ok?
Most slow cookers are under 500 watts, check the wattage of your slow cooker and then get an inverter with a bit higher wattage. I like 50% higher than I need, but thats a personal thing.

Here's a very easy to make sauce, great with Pies, Pasties, Steak etc, it will keep overnight in fridge, but separates in freezer. I've sort of developed it over a BBQ season in OZ, seeing we lived in Padstow (nsw) I called it Padstow Sauce

Take2tbsp of Horseradish sauce, stir in 1tssn full of English Mustard, finely chopped Parsley & spring onion, black pepper to taste. Add 2tbsp Cider.
Simmer for five minutes (do not let it boil!) take off heat then add 1/4 single cream

I've tried it with Shellfish, it's "unusual", an acquired taste I'm told, but I liked it

Here is the easiest chicken recipe ever....

Chicken quarter - one per person - rubbed with salt
Diced carrot
Diced potato
Cider
Slow Cooker

Put chicken quarters and veggies into slow cooker and pour in enough cider to cover.
Cook for 6 hours.

Eat. Drink the remaining cider when you have finished driving for the day.

My slow cooker boeuf bourguignon is a bit like that. When its done sieve the meat out and throw to the dogs and drink the gravy moped up with crusty bread :D.

Here's a very easy Pavlova base , but you need a Kenwood type of mixer for this ,

Beat 4 Egg Whites, and add (while beating on max)
1 1/4 cups sugar
3 desert spns of cold water
1tspn vanilla
1tspn vinegar

When sugar dissolved fold in 3tspns Cornflower

cook at 140c- - 1hr

turn oven off with door ajar until cold

Here is one if you like KFC but are more into healthy eating. I found this as good if not better than KFC.
Oven Fried Chicken

3 Chicken pieces ( or amount needed for the number of people you are serving)
Single serving size of yogurt.
Flour
Egg white
Bread Crumbs
Make yogurt mix by mixing egg white with yogurt.
Flour both side of chicken then, moisten both sides in Yogurt mix, Coat both sides with Bread Crumbs.
Place in oven at 350 degrees for approx 1 hour or until meat thermometer reads 180 degrees.
I use Greek yogurt in the lime flavour....Great!!
When you cut into this chicken you would think that the skin is still on but, it is the way it is coated that makes that skin. Healthier and sooo delicious.
