We're a duo but often cook more than needed and freeze it.

Last weekend we got a ham hock at the farmers market. Cooked that in the slow cooker. Nice dinner for two with a baked potato and sweetcorn and plenty left over for sandwiches the following lunchtime.

Put the stock in the fridge and left a packet of dried peas to soak overnight. Next morning took the fat off the stock just leaving the jelly. Boiled up with the peas, a carrot, an onion and a little water - result, four generous sized portions of thick pea soup (two of which are in the freezer.

Total cost about £5. Who says good food is expensive?

Todays dinner is what we would of had on Friday night if we hadnt had to come home. I bought a chicken breast in gravy from Asda, mashed potato and a large bag of veg plus I bought extra chicken gravy as I can microwave them all, and we have a dinner whilst away. Breakfast this morning was coissants and lunch maybe chicken korma that was last nights tea. Well gotta use it all up or it will go to waste.

Yummy, that's exactly the sort of thing I would do. I wouldn't like to tell you how many dinners I got out of the Christmas turkey. We had turkey and bacon pie, stir fry, risotto all quite a few times, and we're just about finished now.::bigsmile:::bigsmile:
