If we know water may be in short supply we run with a full tank and 2 x 20Lt containers in the garage, it puts us 50 - 75kg overweight not dangerous as the chassis is a 3850 downplated by the converter to 3500 like a majority of 3500 vans are. Also every 100miles traveled used approx 15 kg of fuel. if we were to get checked it's 50/50 we would we overweight depending on when we last filled all tanks, and would only need to dump water to be allowed to carry on, and probably not enough over to attract a fine.
Our typical running weight for most of the time with 75% fuel & water we are spot on 3500 not allowing for the +/- 50kg tolerance on a weighbridge.

When I said it puts us over weight I didn't just mean in France but anywhere. The van is a Hymer Classic, 3400 fully up and as far as I am aware that is a chassis max that cannot be upgraded or replated.

But from all the comments I would seem to be being over cautious.

Anyone know where there's a tap between Dartford crossing and Folkestone! o_O
