After a late start to the season I ended up with a bumper harvest of ripe tomatoes.. here is a recipe I used make the most delicious tomato soup ..
* About 4lbs tomatoes
* 1 large onion
* 1 or 2 cloves of garlic ( optional )
* 1 large potato (grated)
* Basil , fresh is best but I used dried, about a tea spoonful
* 2 pints of vegetable stock ( I used Knorr stock cubes )
* A dollop of olive
* Salt and black pepper
Method:
* Finely chop the onions and garlic, place in a large stock pot and sweat in the olive oil until soft
* Peel the tomatoes and chop then add to the pot with basil and seasoning.
(steep them in boiling water for a few minutes and the skins come off easily )
* Add the stock and simmer for about 40 mins
* Add the grated potato and simmer for another 30 mins
* If you like it smooth, whisk or liquidise then sift to remove seeds.
