Tomato soup .. (1 Viewer)

After a late start to the season I ended up with a bumper harvest of ripe tomatoes.. here is a recipe I used make the most delicious tomato soup ..

* About 4lbs tomatoes
* 1 large onion
* 1 or 2 cloves of garlic ( optional )
* 1 large potato (grated)
* Basil , fresh is best but I used dried, about a tea spoonful
* 2 pints of vegetable stock ( I used Knorr stock cubes )
* A dollop of olive
* Salt and black pepper


Method:

* Finely chop the onions and garlic, place in a large stock pot and sweat in the olive oil until soft

* Peel the tomatoes and chop then add to the pot with basil and seasoning.
(steep them in boiling water for a few minutes and the skins come off easily )

* Add the stock and simmer for about 40 mins

* Add the grated potato and simmer for another 30 mins

* If you like it smooth, whisk or liquidise then sift to remove seeds.

Got a lot of cherry tomatoes left on the plants so I made a Chilli-con-carne heavily flavoured with tomato. Don't have a recipe I just wing it - means things never taste the same twice

ahh Jim sounds good, I make a similar soup but will take onboard the differences in your recipe :thumb:

what do you do differently .. ?

I also used up about 3 lbs of green toms to make chutney .. mmm.. should be just right by Christmas ..

Yes it is.. my daughter Chaz gave me the ultimate compliment ..

"It's much better than Heinz" ... which of course it is..

Now my toms are all finished, I put some in the freezer for Christmas .. glad you enjoyed it .
