I have a set of levelling ramps in the RV that I have never used. Could do with using them on current pitch as slightly sloping to one side.

Question is, do I need 2 ramps for the rear twin-wheel axle or can I just drive up ramp on the outside wheel?

better to use both as under 1 it can cause overloading of the tyre although under 1 wheel is more convenient and a bit like parking with 1 wheel on the kerb.

I always use two on my RV

I always use two on my RV.. keeps the load weight level on the suspension...

saves risk to tyre damage.
