heading down Spain in December, done this before , but just wondering what aires others stop at on the way through France and how far others travel per day, we are using the west route without Aires.

Assuming you don't drive straight through, if you don't use aires where do you stop?

In reality although many aires, especially in northern France, are technically closed in reality you can still stay on them although there probably won't be any services - the water gets turned off for the winter. Last year whilst travelling with friends, we stopped off at a "closed" aire but found in the morning that someone had very kindly turned the water back on for us. Another time we found the electricity was still connected although the water was off!

As for how far we go, we tend to take our time then around an hour before we want to stop we have a look for somewhere suitable in our various books, guides and apps, always making sure we have an alternative just in case. Have never had a problem; well there was just the one occasion when I was suddenly overtaken by fatigue and just had to stop. An enquiry at the mairie of the village we were in elicited the response that we were welcome to stay in their carpark!
