My son has a Dethleffs low profile motorhome (2012) and as the 95ah battery is defunct he wants to fit two 110ah replacements. The system is controlled by a Schaudt EBL 101, and there is a circular dial, the left handed side of which shows volts and the righthand side shows amps.

Photo attached - I hope ...

I knew how to amend the situation on my Hymer with the Schaudt panel but am lost on these circular dials - is it necessary to tell the dial that more amps have been installed and if yes how do you go about doing it please?

Looks like the amp side just shows charge/discharge, so nothing to do, your Hymer would have told you how many amp hours left in the batteries.

As an aside,...... ;)

When I saw that picture the first thing that sprung to mind was 'WOW !. Someone has a picture of a 1930's dirigible balloon control panel !'
