    Hi all
I racked off a very nice apple/blackcurrant/elderberry the other day and since then it seems to have stopped working
It tastes brilliant but still a bit sweet, on the hydrometer it shows as being medium
Is there a way to re start it to get the SG down ?
    Cheers
    Chris

Hi @chrisboyo, Google wine yeast. You should be able to restart it.
    Dave.
PS, do you have it in a warm enough place to allow it to ferment.

What's the actual hydrometer reading? It should be something like 1.005. If its a bit more but the wine is clear it might still be finished. You can get some sugars which are in fermentable.

place it some where warm airing cupboard in the living room if you haven added any Camden tabs it should start agene what yeast did you use
if it dose not start agene don't worry bottle mature and drink don't forget half Camden tab per Galion mixed with 1/4 teaspoon of citric acid in 1/4 cup of water just to kill off any residual yeast before bottling

Hydrometer reading about 1.002 Wifey liked it so gonna leave it where it is, clear it and bottle it
    Ta
The next lot is going to be Apple/Plum/Elderberry mix
The previous lot was made by mashing up the fruit with a potato masher, add 2 pints hot water, wait for it to cool down add 6 pints just warm water, add yeast and other bits in the bucket, leave until main fermentation slows then into a demijohn
Next time I am going to try, simmering the fruit first, a light mash, drain off the juice for the wine then using the fruit to make jam
When does the team think ?

1.002? It's fermented out. Bottle it when clear and sit back and try not to drink it too soon! :) Add a Camden tablet too.

I'm not sure about simmering the fruit. I suspect you might drive off things which give flavour, but worth a try!

The only gripe I have with "country" wines is they take months even years to mature. Make a wine with grapes and you can drink it after a few weeks. I know, we used to do it in Kuwait!
