I love mead and buy a bottle every Decrmber, a nice warming Christmas drink. Hope yours turns out to your liking.

many many years! since I was a kid
another fascinating fact is that honey, and mead is the origin of the term honeymoon

back hundreds of years ago it was traditional for the bride's father to provide as much mead as could be drunk until the next full moon following the wedding ceremony. hence the honey moon

anyway, as already said, honey doesn't go off and is one of nature's miracles

no2 one gallon of dark treacle barley wine using honey as the base sugar will continue to aide till yeas cannot ferment any more expected 14%V0L

well just wracked off the mead and had a wee taste it tastes of honey suckle with a hint of lavender. :Eeek:
I am no expert but definitely slight sented taste to it
