I have absolute admiration for truck drivers. I am sure many of us have parked up on rest areas and seen the way they can reverse into a tight spot. They always know what vehicles are around them and rarely do anything unexpected.
As for doing 56 mph and sometimes taking a while to get past - I think this happens because a fully loaded truck might struggle a bit whereas an empty truck can maintain 56 mph easily.
Personally, I keep in the left lane as much as I can. Life is quite simple when you put the cruise control on at 56 mph and you can almost drop off. There are people who hog the middle lane and I tend to pass them if I am able on the nearside lane. I don't glare, I don't honk, I don't nip in front of them, I just go with the flow.
I notice in America that just about everybody has cruise control and they do the limit. If the limit is 70, they don't do 71 or 72; they know they will get a ticket if they do. They are allowed to pass in any lane and it seems to work.
