Can anyone tell me what tool is required to remove a door mirror on the
current fiat ducato cab i think the two bolts could be star bolts but not
sure of the size

They are called Torx Bits a good set can be purchased for a couple of quid to a fiver at market stalls etc you will pay a lot more if you buy individual bits, you will come across them more and more so a full set will come in handy
as for what size yours are, it will be a pure guess, as one week they will use a 30 the next a 35 and the week after a 40oh:
