OK, we've done with work, moved house and family sorted. Now it's time for a trip with our fifth wheel.

We plan to take the Hull to Zeebrugge ferry and venture through Belgium, Germany, northern Italy, south of France, Spain (maybe west coast) and end up in Portugal.

Any help or suggestions would be greatfully received.

For example, are stellplatz etc only for motorhomes? Are we allowed on them?

That's a HUGE question. :)
I can only suggest: (because this is what we have)
Buy the ACSI card and books.
Install CamperContact on your phone/tablet.
Get a MiFi with a Three PAYG mobile data card, you really need one (12Gb) card for every 2 months you plan to be away.
A selection of DK Eyewitness guide books for the countries you are going through.
Paper maps of said countries.
Phrase books.
GPS with European maps. We have a basic sub-£100 Garmin but get a truck one if you want.
The subscription to MHF you already have. :)

Then just go.

Have a look on here for threads about trips folk have taken through those countries for some ideas. There is a lot about northern Italy and the lakes. Southern France along the coast can get very crowded of course but inland there is a lot to see. We'll be cutting across the bottom of France in April heading for Italy from Spain. The challenge at that time of year will be finding sun and avoiding snow, so we probably will be following the coast.
