Something to try ... if you fancy...

FISH CREOLE in one pan (or two if served with rice or pasta).... or use chicken or pork if you wish...

Serves Four

1 tbs oil

1 medium onion, finely chopped

2 tsp Garam Masala

1 tsp Ginger Ground - or thumb of fresh

1/2 tsp Allspice Ground

400g (14oz) tin chopped tomatoes - or fresh plum toms

2 tbs tomato purée

1 tsp sugar -...... I omit this because I use the juice from the pineapple instead - or to taste

1/2 tsp salt

1/4 tsp Minced Garlic - or 1 or 2 fresh minced cloves :)

Pinch of Cayenne Chilli Pepper - or a fresh chilli(s) for a kick!!.

150ml (1/4 pint) water - ...... I reduce this equal to pineapple juice used

225g (8oz) tin pineapple pieces - drained ... or fresh ( If tinned I buy pineapple in own juice)

450g (1lb) cod fillet, skinned and cubed - ..... or Monk fish, Dog fish/any meaty white fish... or large prawns, mussels etc.... or any other seafood or a combination of all...

Serve with rice or pasta!.. [or make as a risotto or spicy paella type dish using appropriate type rice ( adding the sea food last minute sorta thing)...

Sounds tasty. I am guessing the method is something like: cook the dry spices in the oil for a few moments then add garlic, onions and ginger, soften, then chuck everything else in and cook for about 20 minutes, if using fish.

yup that's bout it ..

The base cooking method if eating wi rice/ pasta seperately...

Heat the oil in a frying pan and fry the onion until softened.

Add the Garam Masala, Ginger and Allspice and cook for a minute or so

Then add the tomatoes, tomato purée, sugar, salt, Garlic, Cayenne Pepper/Chilli and water etc...

Bring it a gentle boil, stirring of course. Then simmer gently, uncovered, for say 7/10 minutes or so....

Finally... Stir in the pineapple and cod. Cover and simmer until the fish is tender.

Else if risotto - cook as risotto-ish and then sea food after etc...
