When we go to France, we are told that we can't get the type of gas bottle that we use in the UK
Is that right, and is it easy enough to get gas over there?
Anything else we need to consider?

Correct, the French bottles have a different connection.

You need to buy a french bottle and regulator or invest in a gaslow type refillable system.

As far as im aware the larger supermarkets have them but the regulator will need fitting in place of the current uk one.
If you have a bulkhead regulator rather than the old bottle top type you need a french 'pigtail' hose to replace the uk 'pigtail' fitted to the regulator.
The bulkhead regulator can still be used once the hose is changed
